What you'll need:

100g skinless chicken breast, raw

15g mushrooms

20g cherry tomatoes

25g onion

20g mozzarella

2tbsp tomato paste

½ clove minced garlic

1 pinch salt

1pc wholemeal tortilla, large

1tsp olive oil

½ tbsp salsa

1 cup green salad, of your choice

Instructions:

  1. Preheat the oven to (200°C.
  2. Cook chicken in the oven for 20 minutes or until no longer pink.
  3. Once cooked, shred chicken. Slice mushrooms, tomatoes and mince garlic.
  4. Line a pizza or baking tray with parchment paper, then with a pastry brush coat with olive oil to stop the pizza base sticking to the bottom. Then add the tortilla and brush lightly around the crusts to stop them from burning.
  5. In a small jug, mix together the tomato paste, salsa, garlic and salt. Then evenly spoon over the pizza base.
  6. Top tortilla with chicken, cherry tomatoes, mushrooms and mozzarella.
  7. Place in the oven for 10 minutes, or until the cheese has melted.
  8. Slice and serve alongside salad. Enjoy!
