What you’ll need:

2 tsp soy sauce (gluten-free)

50g cucumber

1 radish

50g spring onion

¼ avocado (medium-sized)

40g spinach or baby spinach

50g edamame beans

150g skinless chicken breast, raw

1sp olive oil

10ml lemon juice

5g ginger, fresh

Method:

  1. Thinly slice cucumber, radishes and spring onions and slice avocado. Place in a large bowl with edamame beans, spinach and sesame dressing.
  2. Lemon Mixture: Mix together lemon juice, soy sauce, olive oil and grated ginger in a small bowl. Add a small dash of water if required.
  3. Cut chicken into steaks and marinate with lemon mixture.
  4. Place marinated chicken in a medium fry pan over medium heat until cooked through.
  5. Place salad on a plate and top with chicken steaks. Drizzle any remaining glaze from the pan over the chicken and salad.
  6. Enjoy!
